Spring Detox: Rejuvenate Yourself

cleansing_blogSpring celebrates rebirth and rejuvenation. It is the best time of years to boost your metabolism and energize it while cleansing it of toxins. This is particularly true if you suffer from headaches, indigestion, recurring colds, constipation, insomnia, PMS or sluggishness; a spring detox could be extremely beneficial.

One of the best detox foods is kitcheri. This healthy and nutritious meal is renowned for its ability to soothe an upset stomach, as it is easy to digest. Kitcheri contributes to build vitality and strength, as it helps balance us. A light meal comprised of basmati rice and moong beans, is considered an excellent way to ease the burden on our normally overtaxed digestive system. In India this diet is a means to cleanse toxins and allow the body to devote energy to heal itself.

Here is an easy and delicious kitchery recipe from Simple Pleasures of the Indian Table by Chanchala Birla:

Moong Dal Kitcheri

½ cup split moong dal (with skin)
½ cup basmati rice
4 ½ cups lukewarm water
2 ½ tablespoons oil
1 pinch asafoetida
½ heaping teaspoon cumin seed
½ tablespoon fresh ginger (grated)
2 large garlic cloves (finely chopped)
½ cup onions (finely chopped)
1 ½ teaspoons salt
1 cup potatoes (peeled and cut into 1" chunks)
1 celery stalk (finely chopped)
½ tablespoon black pepper

Check the dal for any stones. Wash the dal and the rice separately in lukewarm water. Combine the rice and dal and soak in 4½ cups of water for 15 minutes.

Place a large pot on medium heat and add the oil. When hot, stir in the asafoetida, cumin seed, ginger, garlic and onions, and sauté until golden brown. Add the dal and rice mixture (with the water it has been soaking in) to the fried onions, along with the salt, potatoes and celery. Bring to a boil, turn the heat down to low and simmer for 25 minutes. Remove from heat and sprinkle with black pepper. Stir just before serving.
